Between creative and delicious courses at Toronto’s TrumpTowersHotel’s, Stock Restaurant, I learned about OpalCollection, a privately owned group of luxury ocean and Gulf , the undertheradar properties in Florida.

The exquisite, The Resort at Longboat Key, in Sarasota, another lovely escape from the cold, is known for their tennis courts, golf course, beach yoga, wellness studio, healthy dining even suggesting meals that are gluten free and vegetarian. But then there’s also culture in nearby Sarasota.. from jazz and art to Sarasota’s shopping on St. Armand’s Circle and the wonderful Sarasota Opera House.
It would be hard to decide which is my favourite of the Opal Collection ( there are 8 and counting), but I wouldn’t mind spending time at the elegant Edgewater Beach Resort in Naples, located on the Gulf of Mexico. Options are overwhelming from Arts Center to the weekly Farmers Market.The luxurious suites overlook miles of white sandy beaches.

Now back to the table and onto a dessert tray of creme brûlée, cheese cake, and beignets to die for. And who could resist the chocolate cart topped with a yummy Canadian icon, a moose.
That was presented after a most graciously served, superb meal, created by the new chef, Bill Osborne, formerly with Canoe. Next time I’m starting with dessert.
I’ve never longed for winter, in fact, I hate the cold. And now after viewing the group of these hotels with waterfront views and wanting the white sand to caress my feet, I can understand why over 1 million visitors and Snowbirds descend on sunny Florida.
